6 cups mushroom stock, low-sodium
4 pieces chicken eggs, lightly whisked
1 can diced tomatoes
1 tablespoon light soy sauce
½ teaspoon brown sugar
Pinch of sea salt
Pinch of white pepper
For Garnish
10 pieces hard-boiled quail eggs, halved
1 tablespoon chives, minced
Directions:
1.Except for whisked eggs, pour remaining soup ingredients into Dutch oven set over high heat. Boil; drizzle in eggs in slow stream. Turn off heat. Stir gently. Residual heat will cook eggs through. Taste; adjust seasoning if needed.
Ladle equal portions of soup into bowls. Garnish with quail eggs and chives on top. Cool slightly before serving.
