8oz raw chicken breast tenderloin
1/4 cup canned mandarin orange wedges in light syrup
Dash of lemon pepper seasoning
4oz romaine lettuce
1oz baby spinach
1 small cucumber
1 small Haas avocado
1 small tomato
1oz walnuts
6 tbsp olive oil
2 tbsp balsamic vinegar
Dash dried rosemary
Salt and pepper to taste
Peel and dice cucumber, avocado, and tomato.
Cook chicken breast in a skillet over medium heat for 10 minutes.
While chicken is cooking, combine olive oil, vinegar, salt, pepper, and rosemary in a lidded jar and shake to combine.
Tear lettuce and spinach into smaller pieces and arrange on a plate.
Add cucumber, avocado, tomato, cooked chicken, walnuts, and orange wedges to the lettuce and spinach.
Top with vinaigrette mixture.
