Ingredients:
1 sashimi grade ahi tuna steak, diced up
1 peeled and cubed avocado
1 jalapeno with the seeds removed and finely minced
1 Tbsp. minced cilantro
1 ½ Tbsp. lime juice, freshly squeezed
Salt
Pepper
1 ½ seedless cucumbers, trimmed into noodles
Poke Dressing
2 tsp. white sesame seeds, toasted
2 tsp. sesame oil
¼ c. soy say
1 tsp. rice vinegar
¼ c. diced scallions
Directions:
To begin this recipes, bring out a bowl and combine together the ingredients for the poke dressing. Make sure that they are well combined before adding the tuna inside. Stir it together and then set aside so that the tuna steaks can marinate.
While the tuna is marinating, bring out another mixing bowl and combine together the lime juice, cilantro, jalapeno, and avocado. Season with the pepper and the salt. Whisk it together so it becomes creamy, adjusting the seasonings if you like.
Take the cucumber noodles and pat them dry before adding in with the mixing bowl and tossing it all around so that the noodles become completely coated in with the avocado sauce.
