Ingredients:
12 ounce package Tofu, drained and diced
1 Tablespoon flavorless oil
2 stocks green onion, diced
1 large can tomatoes, peeled and diced with juice
Pinch of ground turmeric
Pinch of salt and fresh ground pepper, each
Garnish: cheddar cheese, grated
Directions:
In a medium skillet, heat the oil over medium heat.
Add the green onions, sweat for 1 minute.
Stir in the tomatoes, and diced tofu.
Season with turmeric, salt and pepper.
Cover, reduce the heat. Simmer until the tofu is tender.
Serve immediately. Garnish with grated cheese.
