Blackberry Ice Cream

Sweet/tart blackberry in delicious creaminess.

Preparation Time: 30 minutes plus chilling

Cooking Time: 7 minutes

Servings: 10

Ingredients:

1 cup blackberries, chopped

3/4 teaspoon liquid Splenda

1 teaspoon lemon juice

1 teaspoon vanilla extract

4 cups heavy whipping cream

Directions:

1. Combine the blackberries with lemon juice and Splenda in a large saucepan.

2. Mash the blackberries slightly then bring the mixture to a boil on medium heat, occasionally stirring, about 5 minutes.

3. Transfer to a blender then puree until smooth. Stir in the vanilla and cream then cover and place in the fridge for 2 hours.

4. Pour into your ice cream maker. Process according to the manufacturer's directions.
