Servings: make 2 quiches – 12 servings
Ingredients:
• Shredded cheese (muenster or Colby Jack) – 5 – 6 cups (divided in half)
• Butter – 2 tbsp + more to grease skillets
• White onion (chopped) – 1
• Eggs (organic) – 12
• Heavy cream – 2 cups
• Salt and pepper – 1 tsp each
• Dried thyme – 2 tsp
Instructions:
• First, preheat oven to 350°F.
• Take a skillet and melt the butter over medium-low heat. When butter melts, add vegetables and sauté until onions are soft. Then, remove from the heat.
• Butter two quiche pans or deep pie dishes. Put two cups of shredded cheese into both pans or dishes and add sautéed vegetables, ½ of the amount into each dish. Layer vegetables over cheese.
• Crack 12 eggs into a large mixing bowl. Then, add cream and spices and whisk to combine all ingredients.
• Pour ½ mixture over each pan or dish and use a fork or a spoon to gently distribute the mixture to all corners of the dishes.
• Place quiche pans in the oven and bake for 20 to 25 minutes or until quiches become fluffy and golden-brown. You can insert a knife in the center of a quiche, and if it comes out clean, your breakfast is ready.
