Preheat the oven to 350F and then line a parchment paper on a cookie sheet.
Into olive oil, sauté the onions until translucent, then cool for around 10 minutes.
Mince the parmesan cheese into the food processor to obtain fine grains and then set it aside.
Now combine egg and ricotta cheese into a mixing bowl and whisk to smoothness. Then add in the pepper, salt and other spices and combine well.
Add in the minced parmesan and onions, mix and now add in the ground beef. Continue mixing to incorporate all ingredients.
Then sub-divide the meal into 1 once portions to create about 30 pieces. Roll every piece into a ball.
On a cookie sheet, position the meatball and now bake into the preheated oven for 20 minutes.
