● 8 free range eggs
● 2 large yellow onions, chopped
● 3 pounds cherry tomatoes or sweet small tomatoes, halved
● 1 tablespoons cumin seeds
● 2 tablespoons fresh parsley, chopped
● 2 red bell peppers, cut into thin strips
● ½ cup extra virgin olive oil
● 4 sprigs fresh thyme leaves
● ¼ teaspoon cayenne pepper
● Salt to taste
Method:
Grease a baking sheet with a little oil.
Place the tomatoes on the prepared baking sheet. Season with salt.
Roast in a preheated oven at 400° F for about 30 minutes or until roasted. It should be slightly charred.
Place a large deep pan over medium heat. Add cumin seeds and roast for a minute until fragrant.
Add oil. When the oil is heated, add onions and sauté until translucent. Add bell peppers, thyme and parsley. Sauté for a minute.
Add tomatoes, salt and cayenne pepper. Stir well. Simmer for a while. If you find that there is not sufficient liquid in the pan, then add a little water and stir.
Crack the eggs at different places in the pan. Do not stir.
Lower heat and cook until the whites are set and the yolk is slightly runny. Or cook according to the way you like the eggs to be set.
Serve right away.
