You'll start by cooking the eggs. I prefer to steam the eggs instead of using a hard boiled egg because the shells tends to come right off. To do this, use a medium pot on the stove top, and fit it with a steamer basket. Add about an inch of water to the pot and bring the water to a boiling point. Place the eggs into steamer basket, steam and cover them for like 10 minutes. Set up a medium sized bowl with ice and water. When the 10 minutes is up, put the eggs right into the ice and water bowl. Cool for at least 10 minutes and then peel.
2.You'll want to preheat the oven to 350 degrees. Prepare a baking sheet with parchment paper or foil.
3. In a big bowl, combine the ground up pork, gingerbread spice mix, pepper, salt, and the optional honey. Mix it until combined, but don't over mix it, because it will make the meat tough. Now it's assembly time.
4. For each of the scotch eggs, fill a 1/3 cup with the seasoned ground pork and turn the lump into your hand. You want to flatten the pork like you're making a burger patty. Make it into a wide circle shape.
