Ingredients:
- A tbsp. of butter,
- 4 lean rib veal chops (thick),
- 2 tbsp. of softened butter,
- 2 tbsp. of wine vinegar,
- 1 tsp. of Dijon-style mustard,
- 3 tbsp. of cream,
- 2 tbsp. of olive oil,
- ½ tsp. of salt,
- ¼ tsp. of freshly ground pepper,
- 4 tbsp. of ground parsley.
Directions:
Melt the butter in a non-sticky skillet, then add the chops and cook over a medium heat for 10 minutes or until each side is done. Mix all of the ingredients together (except the parsley) and stir. When the chops have cooked, transfer them to a heated platter. Add the mustard mix to the pan and heat over a low flame. Once done, pour the sauce over the chops and garnish them with parsley.
