To understand why this is the case, it is important to consider the average Western diet which typically contains high amounts of carbs, some protein and little healthy fat. Without the fat, it needs to burn energy, the body turns to carbohydrates which are then transformed into glucose which can be used for fuel. The cells in the body then use this glucose to form the molecule ATP which gives the body its energy.
As a result of this process, insulin is also created which has a variety of effects on the body. It helps to get glucose into the bloodstream when it exists in moderation but any leftovers are then turned into fat for use at a later date. As more and more carbs are constantly being introduced to the system, this fat is never used and it builds up and causes weight gain instead.
Once you cut out all the extra carbs, your body enters the ketogenic state and starts the process known as lipolysis which breaks down stored fats into the molecules fatty acid and glycerol which are then utilized by the liver to create energy by generating what are known as ketones. Ketones then take the place of glucose in most instances where it would be used for energy. When it can’t be used as an alternative, the body turns glycerol into glucose and uses it for things like regulating brain functions.
