1 1/2 lb boneless lean pork loin, cubed
1 Tbsp coconut oil
2 Tbsp chicken broth
1 small onion, chopped
1 green bell pepper, seeded and diced
1 Anaheim chili pepper, diced
3 tomatillos, skinned and chopped
1/2 Tbsp cider vinegar
1/2 tsp dried oregano
1/2 tsp ground cumin
1/4 cup chopped fresh cilantro
1 lime, sliced into wedges
How to Prepare:
Place a Dutch oven over medium flame and heat the coconut oil. Brown the cubed pork, then transfer to a platter.
Stir the peppers and onion into the Dutch oven together with the cumin, oregano, and tomatillos. Saute until tender.
Stir the pork back into the Dutch oven together with the vinegar, broth, and 2 tablespoons of cilantro. Mix well.
Reduce to lowest possible heat setting, then let simmer for 45 minutes.
Top with the remaining cilantro, then serve with the lime wedges.
