Rise off shirataki noodles for 2-3 minutes under hot water. Dry noodles completelyPlace pancetta in a hot pan to sear on the outside. Remove from pan once crisp. Save the fat. Put butter in a small pot and allow its color turn brown. Mix in pumpkin puree and sage once butter starts to turn brown. Add pancetta fat and heavy cream to the pumpkin puree sauce. Mix together until well combined. Add shirataki noodles to pan used to sear pancetta and increase heat to high. Dry fry noodles for at least 6 minutes until much steam has been released. Add and mix parmesan cheese to the pumpkin sauce until well combined. Reduce heat to low and stir until sauce becomes thick. Add pancetta and noodles to the sauce and toss properly. Add and mix egg yolks into sauce.
