Ingredients:
- 3 tbsp. of divided Dijon mustard,
- ½ tbsp. of salt,
- ½ tbsp. of freshly ground pepper,
- 1 pound of trimmed pork tenderloin,
- 2 tbsp. canola oil,
- A quarter of cider vinegar,
- 2 tbsp. maple syrup,
- 1 ½ tbsp. of fresh sage.
Directions:
Prepare your oven to 425 degree F, then combine the mustard, pepper and salt in a bowl. Heat the canola oil on a skillet over medium heat, add the pork and cook for 5 minutes. Transfer the pan into an oven and let the contents roast before transferring it to the cutting board. Place a skillet over medium heat and add vinegar, leaving it for 30 seconds. Whisk the maple syrup and mustard, let it boil until the sauce thickens, then reduce the heat and begin slicing up the pork. Top the pork with the sauce and serve.
