4 large free-range eggs
¾ cup nut butter
½ tsp. baking soda
1 tsp. cinnamon powder
1/3 cup coconut milk
2 tbsp. of a sugar substitute like stevia or erythritol
2 tbsp. butter or clarified butter
 

Directions

Add all the ingredients in a food processor (except the 2 tbsp. butter) and pulse until all the ingredients are thoroughly combined. Set aside.
Melt the butter on a non-stick pan over low fire. Scoop ¼ cup of the pancake batter into the hot pan and then cook until the pancake has set, flip and cook until finished.
Repeat the same procedure for the rest of the batter. You can serve this with a drizzle of an all-natural maple syrup.
