● 2 tablespoons butter, divided
● 1 medium onion, chopped
● 4 ounces hot Italian breakfast sausage, browned
● 2 tablespoons salsa
● ½ cup sharp white cheddar cheese, shredded
● ½ teaspoon Italian seasoning
● 3 tablespoons yellow bell pepper, chopped
● 2 baby Bella mushrooms, chopped
● 3 large eggs
● 2 large low carb keto tortillas
● ¼ teaspoon onion salt
● Oil or butter for greasing
Method:
Grease a baking sheet with oil or butter. Set aside.
Place a pan over medium heat. Add 1-tablespoon butter. When butter melts, add onion, pepper and mushrooms. Sauté for a few minutes until tender.
Add sausage, salt and pepper and cook for a couple of minutes.
Whisk together in a bowl eggs and salsa and pour into the pan. Stir constantly until the eggs are cooked.
Place the tortillas on your work area. Divide half the cheese among the tortillas and place along the diameter of the tortilla.
Next spoon half the sausage mixture over the cheese on each of the tortillas. Sprinkle the remaining cheese over the sausage mixture. Roll the tortillas and place on the prepared baking sheet with the seam side facing down.
Melt the remaining butter and brush over the tortillas. Sprinkle onion salt and Italian seasoning
