Ingredients:
4 ½ ounces crabmeat
½ cup cream cheese
1 avocado, peeled, halved lengthwise, and pitted
¼ cup chopped, peeled cucumber
½ scallion, chopped
½ teaspoon lemon juice
¼ cup red bell pepper, chopped
1 teaspoon chopped cilantro
Freshly black pepper and salt as needed
Directions:
Brush the edges of the avocado with the lemon juice.
In a bowl of medium size, thoroughly mix the crabmeat, cheese, red pepper, cucumber, scallion, cilantro, salt, and pepper.
Fill the crab mixture between the avocado halves.
Cover in a plastic wrap and chill in the refrigerator for 2-3 hours. You can refrigerate for up to 2 days also. Serve chilled!
