Preheat your oven to 375°F.Put 2 eggs into 2 separate mixing bowls. In one mixing bowl, beat egg whites until foamy, add in 2 tablespoons of erythritol and beat until stiff and shiny peaks form. In the other mixing bowl, cream together the egg yolks, the remaining erythritol and ricotta cheese.Add zest and lemon juice into the egg yolk ricotta bowl. Add poppy seeds and vanilla extract. Mix until well combined. Fold egg whites into egg yolks half at a time, stir gently. Add soufflé batter into 4 greased ramekins. Flatten out the tops of the soufflés by gently shaking and tapping ramekins. Bake for about 20-25 minutes until soufflé tops are set.
