The recipe makes 6 servings.
Ingredients:
4 eggs whites
1/3 cup coconut oil
1 1/2 cups almond flour
1 tbsp. lavender buds (culinary grade)
1 tsp. baking powder
4 drops liquid stevia
1 pinch kosher salt
Directions:
1. Combine the coconut oil and almond flour in a bowl. Your hands would be the best tool for this job, and mix until there are pea-sized clumps of fat throughout the mixture.
2. Put the bowl of flour and oil in the refrigerator.
3. Whip your egg whites until they begin to foam, and add the salt, lavender, and baking powder. Mix well.
4. Add the egg mixture to the almond flour and oil, and mix well.
5. Use a tablespoon or ice cream scoop to place clumps of the mixture on a greased baking sheet.
