1 tablespoon of lime juice (15 ml)
Zest from 1 lime
¼ cup of water (59ml)
½ cup of unsweetened full-fat coconut milk
1 tablespoon of fresh turmeric (15 ml)
1 tablespoon of minced fresh ginger (15 ml)
1 clove garlic
1 thinly sliced medium onion
3 tablespoons of avocado oil or coconut oil (45 ml)
Directions
Start by heating oil in a large frying pan over medium heat. Add in turmeric, ginger, garlic and onion. Cook as you stir frequently for 8 minutes or until the mixture is golden. Add in lime juice, lime zest, water and coconut milk. Bring the mixture to simmer.
Mix in the vegetables and then season the mixture with salt and pepper. Cover the mixture and remove from the heat.
Preheat your grill pan and then rub the salmon with pepper and salt. Grill the salmon skin side touching the pan for 5 minutes. This should be over medium heat. Turn the salmon and continue grilling until it is cooked thoroughly.
