● 2 lbs. wild caught shrimp, deveined and shelled
● 1/4 cup tomato paste
● 1 can diced tomatoes, 14 oz.
● 1 can vegetable broth, 14 oz.
● 2 tbsp. butter, melted
● 1/4 cup red bell pepper, sliced
● 1/2 cup celery, chopped
● 2 medium onions, chopped
● 1 tbsp. garlic, minced
● 1-1/2 tbsp. Italian seasoning
● 1 tsp. parsley
● 1 tsp. sea salt
● 1/2 tsp. pepper
Directions
1 Add all ingredients to slow cooker (except shrimp).
2 Mix to ensure an even coating.
3 Cook on low for 5 hours.
4 Add shrimp and cook for 25 more minutes (make sure shrimp is pink).
5 Serve with rice.
