Baked Ham and Kale Scrambled Eggs
Ingredients
5 ounces ham diced
2 medium eggs
1 green onion, finely chopped
1/2 cups kale leaves, chopped
1 garlic clove, crushed
1 green chilli, finely chopped
4 ready-roasted peppers
pinch cayenne pepper
1 Tbsp. olive oil
1/2 can water
Directions
Heat oven to 360F.
Heat the oil in a small ovenproof frying pan. Add green onion and cook for 4-5 mins until softened.
Stir in the garlic and chilli, and cook for a couple mins more.
Add the 1/2 cup water. Season well and stir through the ready-roasted peppers and ham. Bring to a simmer and cook for 10 mins.
Add the kale, stirring through to wilt.
In a small bowl, beat the eggs with a pinch of cayenne and pour in frying pan together with other ingredients.
Transfer the frying pan to the oven & bake for 10 mins. Serve hot.
