Cook the gnocchi according to the instructions on the packaging. Cut ½ cup cherry tomatoes in half and cut one small clove of garlic into thin slices. Heat ½ tablespoon olive oil in a pan. Add the tomatoes and garlic, season with a pinch of salt and pepper, and cook until tomatoes soften. Chop the fresh sage and add all but a pinch to the tomatoes and garlic.
Top the cooked gnocchi with the tomato, garlic, and sage mixture. Add the final pinch of sage as a garnish.
Day 4: Non-fast day
Breakfast: Soft-Boiled Eggs and Toast
Ingredients:
Eggs
Butter
Whole wheat bread
Directions:
Heat a couple inches of water in a small saucepan. Once the water is simmering, place two eggs gently in the pan. Simmer for five minutes. Pour off the hot water. For one minute, run cold water over the eggs. Toast and butter two pieces of whole wheat bread. Peel the eggs and spread them on the toast, or cut the toast into strips and dip each strip in the soft-boiled egg.
Drink water, tea, or coffee.
Lunch: Toasted Margherita Sandwich
