One medium cauliflower, cut into pieces
One can beans (rinse them well)
½ cup barley, ½ cup parsley leaves and 2 tbsp. tarragon leaves
1 tbsp. lemon zest and 3 tbsp. lemon juice
6 tbsp. extra virgin olive oil
1 tbsp. light mayonnaise and 1 tsp. mustard
Salt and pepper
Heat one tbsp. of olive oil in a pan and add the cauliflower, cooking it until it gets caramelized on some of the sides (10-12 minutes). Add water (2 tbsp.) and cook a few more minutes until it’s nice and tender. Season to taste.
In the same time, in a larger saucepan boil the barley in salted water for about 25-30 minutes. Rinse it in cold water and let it rest while preparing the sauce. For that you need the mustard, mayo, remaining olive oil and the lemon juice. Mix them well and season with salt and pepper.
Into a larger bowl add all the ingredients, tossing well to coat the vegetables with sauce and herbs and then it’s ready to be served.
