Adorable Pumpkin Flaxseed Muffins

 

Ingredients

1 egg

1 1/4 cup flaxseeds (ground)

1 cup pumpkin puree

1 Tbs pumpkin pie spice

2 Tbs coconut oil

1/2 cup sweetener of your choice

1 tsp. baking powder

2 tsp. cinnamon

1/2 tsp. apple cider vinegar

1/2 tsp. vanilla extract

salt to taste

 

Directions

Preheat your oven to 360°F.
First, grind the flaxseeds for several seconds.
Put together all the dry ingredients and stir.
Then, add your pumpkin puree and mix to combine.
Add the vanilla extract and the pumpkin spice.
Add in coconut oil, egg and apple vinegar. Add sweetener of your choice and stir again.
Add a heaping tablespoon of batter to each lined muffin or cupcake and top with some pumpkin seeds.
Bake for about 18 - 20 minutes. Serve hot.
