1 cup brown basmati rice
2 cups vegetable broth
1 tbsp. shallot, diced
Unpeeled fresh ginger (a one inch piece)
1 tsp. lemon zest and 1 tbsp. lemon juice
1 tbsp. parsley, chopped
1/8 tsp. saffron and 1 tbsp. extra virgin olive oil
Salt, to taste
Mix the saffron with a tsp. of warm water and add it into a pan with heated olive oil. Add the shallot and let it sauté for a few minutes. Add the rice and the ginger root, stirring very well. Also pour the broth into the pan and let everything boil for about 35-40 minutes, until the liquid is absorbed. When the rice is tender, remove the ginger and add the lemon zest and juice.
