Ingredients
12 chicken thighs
30 oz. chopped cauliflower
6 green onions
1 onion, chopped
1 green pepper
6 bacon Slices
1 cup Cream Cheese
1/2 cup heavy cream
8 oz. Pepper Jack Cheese, shredded
8 oz. Cheddar Cheese, shredded
1 Tbsp. garlic, minced
salt and pepper to taste
Directions
Preheat oven to350F.
Chop up a head of cauliflower into florets. Cook the cauliflower in the microwave on the vegetable setting. Set aside.
In a pan on stovetop, toss the chicken thighs with salt and pepper to taste. Add some water to about mid-thigh and cook for 60 minutes. Chop up the onions and peppers and pan fry it.
Add all of the other ingredients, reserving 2 oz. Cheddar and 2 oz. of Pepper Jack Cheese.
Add the mixture into a large, greased casserole dish and top with the remaining cheese.
Cover with foil and cook for 30 minutes. Serve hot.
