Ingredients
4 chicken thighs
16 whole cloves of garlic
2 Tbsp. ghee
2 Tbsp. juice of one fresh lemon
1 cup of baby carrots
1 onion, cut into quarters
2 tomatoes cut in half
3 Tbsp. garlic olive oil (or extra-virgin olive oil)
oregano
Salt and pepper
Directions
Preheat oven to 500F degrees.
Grease the bottom of a non-stick frying pan with garlic olive oil (or olive oil). Add in the chicken thighs together.
In between the thighs, wedge in the garlic gloves, onions, tomatoes and baby carrots.
Pour the lemon juice over the chicken thighs. Drizzle ghee and garlic oil over the thighs.
Sprinkle oregano over the dish and season with salt and pepper to taste.
Bake in preheated oven for 25-30 minutes.
Reduce heat to 350 and cook for 20 minutes more.
Once ready, let cool for 5 minutes on a wire rack and serve hot.
