Bell Pepper and Ham Omelet
Ingredients
4 large eggs
1 cup green pepper (chopped)
1/4 lb ham, cooked and diced
1 green onion, diced
1 tsp. coconut oil
salt and freshly ground pepper to taste
Directions
Wash and chop vegetables. Set aside.
Into a small bowl beat the eggs. Set aside.
Heat non-stick skillet over medium heat and add coconut oil. Pour half of the beaten eggs into the skillet.
When the egg has partially set, add half of the vegetables and ham to one half of the omelet and continue to cook until the egg is almost fully set.
Fold the empty half over top of the ham and veggies using a spatula.
Cook for 2 minutes more and then serve.
Serve hot.
