Ingredients
Cooking spray
3 ounces bittersweet chocolate, coarsely chopped
1 large egg, lightly beaten
1 teaspoon vanilla extract
1 cup dried cherries
¾ cup packed light brown sugar
6 tablespoons unsalted butter
½ teaspoon salt
1 teaspoon baking soda
1½ cups old-fashioned rolled oats
1.5 ounces whole-wheat flour
1.5 ounces all-purpose flour
Method
Preheat the oven to 350 degrees
Combine flours, oats, salt, and baking soda stir with a whisk.
Melt butter in a small saucepan over low heat. Remove from heat; add brown sugar and stir until smooth.
Add the sugar mixture to the flour mixture and beat with a mixer at medium speed until well blended.
Fold in chocolate, and then spoon dough 2 inches apart onto baking sheet coated with cooking spray.
Bake for 12 minutes and then cool until firm.
