1 cauliflower, cut into florets
4 sprigs of thyme
4 garlic cloves and 1 onion, sliced
½ cup grated Parmesan
3 tbsp. of extra virgin olive oil
Salt and Pepper, to taste
Heat the oven, medium to high heat and toss all the vegetables into the pan, over a baking sheet. Pour the olive oil over them and season with salt and pepper. Bake them for about 35-40 minutes and then add the parmesan, tossing well. Roast until tender, for 10 more minutes and it’s ready to be served.
