¾ cup crumbled goat cheese
½ cup sliced red onion
1 ¼ cups chopped roasted red peppers
4 cups baby arugula
Salt and black pepper
1 teaspoon dried oregano
1/3 cup milk
8 eggs
Directions
Grease your slow cooker with cooking spray.
Whisk milk, eggs, and oregano in a bowl and season with pepper and salt.
Arrange the roasted red peppers, baby arugula, goat cheese, and red onion in the slow cooker. Pour the egg mixture over the vegetables.
Cook for 2 ½ to 3 hours on low; serve immediately.
Breakfast Casserole
Servings: 4-6
Ingredients
12 eggs, whisked
1/2 cup sun dried tomatoes
1/2 cup feta cheese
1/2 cup milk
2 cups spinach
1/2 teaspoon salt
1 tablespoon chopped red onion
1 cup baby bella mushrooms, sliced
1 teaspoon black pepper
1 teaspoon garlic, minced
Directions
Mix together eggs, salt, pepper, and milk, then stir in garlic, red onion, mushrooms, spinach, and sun dried tomatoes.
Dump the mixture in the crockpot and pour the feta cheese on top. Cook for 4-6 hours on low.
Serve and enjoy.
