Ingredients (6 Servings)

 

● 

1-2 tsp olive oil or coconut oil

● 

A handful of baby kale

● 

Non-stick spray or oil

● 

6 oz. roasted red pepper, diced

● 

¼ cup sliced green onion

● 

8 well beaten eggs

● 

4-5 oz crumbled feta

● 

½ tsp seasoning of your choice

● 

Fresh ground black pepper

 

 

Directions

 

Wash kale and dry it via spin dry or paper towels.
Spray the slow cooker with non-stick spray or oil
Use the slow cooker to heat the oil
In the hot oil put in kale and sauté for 3-4 minutes till it becomes soft.
While waiting, dice the red pepper into small pieces and onions into small slices.
Add the diced pepper and onions to the slow cooker.
Pour the well beaten eggs in the slow cooker and stir it so that all the ingredients are mixed well.
Add the seasoning, black pepper, and feta.
Cook for around 3 hours until frittata sets well and the cheese melts.
Serve!
