1 red bell pepper, finely diced
¼ cup of green onions, coarsely chopped
1 cup of baby spinach leaves, washed and torn
1 tablespoon fresh basil, coarsely chopped
3 large egg whites
1 teaspoon of olive oil
freshly ground black pepper, to taste
Method:
Place the red peppers, green onions, baby spinach leaves, and fresh chopped basil in a large bowl and set aside.
Whisk the egg whites with the olive oil and season generously with black pepper.
Add the egg whites to bowl and mix gently so that the vegetables are coated with the egg whites.
Pour into the slow cooker and set it for LOW. Let the frittata cook for about an hour or two, until it is set and cooked to your desired doneness.
