• 2 pounds sweet potatoes, peeled and shredded
• ¼ cup light brown sugar
• ¼ cup unsweetened shredded coconut
• ¼ teaspoon ground cinnamon
• ½ cup chopped fresh or canned pineapple
• ¼ teaspoon pure coconut extract
• ¼ teaspoon pure vanilla extract
• Salt and black pepper to taste
Preparations:
Add two tablespoons of oil to slow cooker. Add the sweet potatoes, light brown sugar, coconut, and cinnamon to slow cooker. Stir well, place lid on slow cooker. Cook for 6 hours on low setting.
Add pineapples, coconut extract, and vanilla extract. Gently mix and serve warm.
