2 teaspoons dried oregano
1/4 cup cilantro, chopped
1/2 teaspoon salt
2 (15.5 ounce) cans white hominy, drained
1 onion, sliced
1/2 cup green chilies, diced
4 cloves garlic, minced
1/2 teaspoon cayenne pepper, or to taste
1 tablespoon canola oil
1 (2 pound) boneless beef roast, cut into 1-inch cubes
2 (14.5 ounce) cans enchilada sauce
Directions:
1) Take a skillet and pour canola oil it. Heat the oil over high flame and cook beef in it for 5-6 minutes.
2) Keep an eye on the meat while it browns (you don’t want it to burn) and keep stirring constantly.
3) When it is done perfectly, take it out from the skillet and place in a cooker.
4) Turn the flame on at low heat and pour the enchilada sauce in it. Further add in garlic, oregano, chilies, cayenne pepper and hominy.
5) Pour in enough water so that it covers all the ingredients.
6) Cover it with a lid and leave it, cooking for nearly 6-7 hours.
7) Add in cilantro and salt and stir to mix it well.
8) Cook for another 30 minutes on low heat and enjoy your delicious meal.
9) Serve and enjoy.
