Ingredients:
Soba Noodles (buckwheat): 500g
Tofu (extra firm): 1 pack
Pepper bell: 1 green or red
Bean sprouts: 1 cup (small)
Pak choi: 1 cup (small)
Onion: 1
Garlic: 1 clove
Vegetable broth (without yeast): 1 cup
Pepper and Sea salt as per taste
Ginger: 1 inch piece (optional)
Directions:
In the first step, you have to cook noodles as per the instructions given on the package.
It is time to cut your tofu into small pieces and cook in one pan with some broth for 3 to 5 minutes and put it aside.
Stir fry chopped pak choi, pepper, bean sprouts, garlic and onion for almost five minutes in one pan. It is time to add remaining vegetable broth. Add tofu and noodle along with some pepper, ginger, and salt in this pan and mix them well. Serve hot with your favorite sauce.
