Spiced Quinoa Porridge
Preparation time: 10 minutes Cooking time: 15 minutes. Servings: 4
Ingredients:
• 1 cup uncooked red quinoa, rinsed and drained
• 2 cups water
• ½ tsp organic vanilla extract
• ½ cup coconut milk
• ¼ tsp fresh lemon peel, grated finely
• 10-12 drops liquid stevia
• 1 tsp ground cinnamon
• ½ tsp ground ginger
• ½ tsp ground nutmeg
• Pinch of ground cloves
• ¼ cup almonds, chopped
Directions:
1. In a large pan, mix together the quinoa, water, and vanilla extract over medium heat and bring it to a boil.
2. Reduce the heat to low and simmer covered for about 15 minutes or until all the liquid is absorbed, stirring occasionally.
3. Add the coconut milk, lemon peel, stevia, and spices to the same pan and stir everything to combine.
4. Immediately, remove the pan from the heat and fluff the quinoa with a fork.
5. Divide the quinoa mixture into serving bowls evenly.
6. Top with almonds and serve.
