LIGHT LENTIL STEW 
  
  
 
INGREDIENTS 
• 250 g of brownish lentils 
• One zucchini 
• Two carrots 
• One onion 
• One clove garlic 
• One bay leaf 
• Two small branch tomatoes 
• One piece of ginger (optional) 
• Three teaspoons of olive oil 
• Two sprigs of coriander or parsley 
• Salt and pepper 
PREPARATION 
1.    Prepare the vegetables. First, peel the onion and the garlic, and chop them. Then, peel the ginger, and chop it too fine. And finally, peel the carrot, wash the zucchini, remove them, and cut them into cubes. 
2.    Sauté the vegetables. Heat 2 teaspoons of oil in a casserole, add half of the onion and the garlic and then cook for about 5 minutes or so. Then add the ginger, bay leaf, carrot, and zucchini, and sauté a little. 
3.    Cook the lentils. After sautéing the vegetables, add the lentils. Cover with 3/4 of a liter (750 ml) of water, and cook over low heat until the lentils are tender, and reserve. 
4.    Assemble the plate.  
5.    Finally, wash the tomatoes and chop them. Mix them with the rest of the onion and garlic, and season them with salt, pepper and the remaining oil. Divide the lentils into four bowls or bowls, and add the tomato hash and some leaves of coriander or parsley. 
6.    And if you want a fresh and ultra-fast version, instead of stewing the lentils, you can buy them already cooked and make a salad. You have to sauté the vegetables a little, but not too much so that they remain al dente. And mix them with the lentils already cooked and drained, and the tomato hash.
