INGREDIENTS
2 portions
2 carrots (à 100 g)
½ big kohlrabi (about 250 g)
2 spring onions
¼ tl rapeseed oil
2 Tsp red lentils (about 20 g)
200 ml mediterranean vegetable broth
Salt pepper
½ bunch parsley
½ tbsp. balsamic vinegar (a bit more at will
PREPARATION
1. Wash carrots, clean and peel, clean kohlrabi and peel as well; both dice small.
2. Clean spring onions, wash and cut into rings.
3. Heat the oil inside a saucepan and sauté all vegetables in it for about 4 minutes.
4. Add 100 ml of water, stir in the lentils and bring to the boil — Cook for about 10 minutes. Then add the broth, salt, and pepper.
5. Wash parsley, shake dry, peel off leaves and chop with a large knife. Season vegetable stew with vinegar, sprinkle with parsley and serve.
