Cashew Caesar Salad
Ingredients:
·1 head of romaine lettuce, chopped
·2 cloves of garlic, crushed
·1 cup zucchini, peeled and chopped
·½ cup of cashew nuts
·½ cup of olive oil +
·3 tablespoons of fresh lemon juice
·1 ½ tablespoon of braggs liquid aminos
·1 tablespoon of hemp nuts
·2 teaspoon of raw sesame seed tahini
·¼ teaspoon of sea salt
Instructions:
A. To make the cashew croutons, place 1 tablespoon of olive oil in a pan and heat. Then, add the cashew nuts, sea salt and 1 clove of crushed garlic. Sauté until the cashews turn light brown. Set aside.
B. Combine all ingredients in a blender except for the lettuce.
C. In a bowl, place the lettuce and the blended mixture and toss well. Drizzle with aditional olive oil if necessary.
D. Top salad with cashew croutons and serve.
