Breakfast Frittata
Ingredients:
•9 eggs
•3 tbsp vegetable stock
•1 ½ tomatoes, diced and de-seeded
•1 ½ cups mushrooms, thinly sliced
•¾ onion, diced
•3 tbsp fresh chives, chopped
•Sea salt, according to taste
•Black pepper, ground, according to taste
Preparation:
•Use ½ tbsp of the stock to sauté the onion on medium heat, till the onion becomes soft.
• Next, add another ½ tbsp of the stock, and add the mushrooms to it. Cook again for around 3-4 minutes, till fully cooked.
•Add the rest of the stock, and the tomato and cook some more.
•In a bowl, beat the eggs together. Next, add the chives and make sure the eggs are well seasoned.
•Pour the egg mixture on the pan – cook on low heat.
•Cover and continue to cook till the eggs become firm.
•Cut into pieces according to a chosen size; then serve.
