Salad with asparagus, cherry tomatoes, and cottage cheese
Ingredients:
4 bunches of green asparagus
150 g of cherry tomatoes
100 g of cottage cheese
30 g peeled walnuts
30 g of kikos (toasted corn)
20 g of peeled sunflower seeds
Two tablespoons of vinegar
Four tablespoons of olive oil
Pepper and salt
Preparation
Clean the asparagus. First, wash the asparagus under the stream of cold water, remove the hardest part of the stem, and cut them into pieces of the same size.
Put water to boil and cook. While preparing the asparagus, boil plenty of salt water in a casserole, add them and cook for 10 minutes till they are tender but whole.
Interrupting the cooking. Once they are done, remove them with a slotted spoon and immerse them for a few moments in a bowl of ice water to halt cooking. In this way, they will maintain their intense green color. And then, drain them again to eliminate all the water.
Prepare the rest of the ingredients. Wash the tomatoes, dry them with absorbent paper and cut them in half. Drain the cottage cheese and crumble it. Cut the nuts into small pieces.
Make the vinaigrette. Arrange the vinegar in a bowl. Add a pinch of salt and another pepper, and pour the oil, little by little, continuing to beat with a fork, until you get well-emulsified vinaigrette.
Emulator and serve. Distribute the asparagus in four bowls. Add the tomatoes, the crumbled cottage cheese, and the chopped walnuts. Dress with the previous vinaigrette. Decorate with sunflower seeds and chopped kikos.
