Healthy Hummus

Traditional hummus is already healthy. However, since chickpeas are one of the foods you should limit, this version adds some eggplant to add flavor while limiting beans. Doing so makes this recipe taste like a delicious combination of hummus and baba manna. To bake the eggplant, place it on a baking sheet and bake in an oven at 350 ° F for 30 minutes, or until softened.
Recipe Tips: If you are in the thyroid support program, omit the eggplant and add another cup of chickpeas.
Ingredients
1 cup chickpeas, canned or cooked
1 cup eggplant, roasted and peeled
1 clove garlic
1 tablespoon sesame oil
1 tablespoon freshly squeezed lemon juice
1 teaspoon sea salt
Water for dilution
Preparations
In a food processor, mix chickpeas, eggplant, garlic, sesame oil, lemon juice and salt. Blend until creamy and smooth. If necessary, add water to form a creamy consistency.
