Almond-Quinoa Muffins
Ingredients
Cooking spray
1 cup vanilla almond milk
¼ cup of applesauce
1 tablespoon flax seeds
1 vanilla bean, cut longitudinally and shave off the seeds
1¼ cup coconut flour
¼ cup almond flour
1½ teaspoons baking powder
½ teaspoon sea salt
½ teaspoon ground cinnamon
1¼ cup cooked quinoa
Preparations
1.Preheat the oven to 350 ° F.
2. Line the muffin pan with paper lining and spray the lining with a cooking spray.
3. In a food processor, add almond milk, applesauce, flax seeds, and vanilla seeds. Blend until smooth.
4. In a medium bowl, combine coconut flour, almond flour, baking powder, salt, and cinnamon powder. These dry ingredients are added to a food processor and pulsed until a batter is formed.
5. Add quinoa and mix until completely mixed.
6. Use an ice cream scoop to oop the batter into a lined muffin pan and fill it with two-thirds.
7. Put the pan in a preheated oven and bake for 15 to 18 minutes, or until the inserted toothpick is clean.
8. Serve.
