A very healthy recipe based on chickpeas and aubergines to incorporate more legumes to the diet with a festive look.
Ingredients:
3 eggplants
300 g cooked chickpeas
1 clove garlic
1 lemon juice
1 tbsp of tahini
8-12 cherry tomatoes
2 tbsp extra virgin olive oil
1 tsp ground cumin
A ½ cup of parsley leaves
Pepper

Preparation
Bake the eggplants, clean the aubergines and then cut them into slices about a ½ centimeter. Next, you spread a baking tray with oil and place the eggplant slices in it, sprinkle them, and roast at 180 ° C for about 15-20 minutes or so.
