Spelt Pasta with Spicy Eggplant Sauce
Ingredients:
14 ounces spelt pasta, cook according to the instructions on the package
2 red bell peppers, chopped
2 large eggplants, cubed
1 large onion, chopped
2 chilies, chopped
2 cloves garlic, minced
1 cup fresh basil
2 cups homemade vegetable stock
2 tablespoons cold pressed extra virgin olive oil
Salt to taste
Cayenne pepper to taste
Method:
Place a skillet over medium heat. Add oil. When the oil is heated, add onions and garlic and sauté until translucent.
Add eggplant, chili, and bell pepper and sauté for 5-10 minutes. Add stock and bring to the boil.
Lower heat and simmer until the vegetables are tender. Add basil, salt, and cayenne pepper. Simmer for a couple of minutes.
Place the noodles in individual bowls. Pour sauce on top and serve.
