Ingredients
2 cup fish stock
2-2 ½ cup water
1/3 pound salmon, cut into bite-sized chunks
Salt and ground black pepper, to taste
1 cup fresh cilantro, roughly chopped
2 tablespoon coconut oil
2 cup leeks, chopped
5 teaspoon garlic, smashed
5 Thai chili pepper, seeded and minced
5 teaspoon turmeric powder
1-1 ½ teaspoon cumin
6 ounces double cream
4 ounces full-fat coconut milk, canned
Directions
Heat the oil in a stockpot over medium-high heat.
Now, sauté the leeks and garlic for 5 to 10 minutes, stirring frequently.
Add chili pepper, turmeric, and cumin; cook an additional minute.
Add cream, coconut milk, fish stock, water, salmon, salt, and black pepper.
Reduce the heat and let it simmer approximately 16 minutes.
Afterwards, ladle into individual bowls; serve topped with fresh cilantro leaves
