Garden Pancakes
Preparation Time: 5 minutes
Cooking Time: 5 minutes
Servings: 2
Ingredients:
1 medium zucchini, roughly chopped
1 carrot, peeled and roughly chopped
1 yellow squash, roughly chopped
½ small white onion, grated
4 scallions
¼ cup almond flour
1 tsp sea salt
½ tsp garlic powder
¼ cup filtered water, as needed
Directions:
Place the zucchini, carrot, yellow squash, onion, scallions, almond flour, salt, and garlic powder in a food processor. Pulse until blended.
Add water to make the mixture moist, not runny. The batter will be fairly thick.
Spray a nonstick skillet or griddle with cooking spray and heat over medium-high heat.
Use an ice cream scoop or ¼-cup measure to drop the batter into the skillet. With a fork, spread the batter evenly, pressing down on the pancakes.
Cook, turning once, until browned on both sides, 5 minutes’ total.
Serve hot or at room temperature.
