76. Quinoa and Lentil Soup
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Servings: 6
Ingredients:
1 tablespoon coconut oil
3 carrots, peeled and chopped
3 celery stalks, chopped
1 yellow onion, chopped
4 garlic cloves, minced
4 cups tomatoes, chopped
1 cup red lentils, rinsed and drained
½ cup dried quinoa, rinsed and drained
1½ teaspoons ground cumin
1 teaspoon red chili powder
6 cups homemade vegetable broth
2 cups fresh spinach, chopped
Directions:
In a large pan, heat the oil over medium heat and sauté the celery, onion, and carrot for 4-5 minutes.
Add the garlic and sauté for about 1 minute.
Add the remaining ingredients except spinach and bring to a boil.
Reduce the heat to low and simmer, covered for 20 minutes.
Stir in spinach and simmer for 3-4 minutes.
Serve hot.
